Marnie Record, workforce specialist, was interviewed Oct. 11 by the State Journal-Register on plans for a new Springfield Winter Market in the Enos Park neighborhood. As part of the USDA Local Food Promotion Program grant that LLCC received in fall 2014, the college is working on starting a kitchen incubator where individuals can rent space to make or develop food products without the often prohibitive expense of starting a kitchen of their own. In addition, a committee has formed, including a wide range of community members and organizations, to start the Springfield Winter Market, which will run monthly, January through April. The market will feature many of the same farmers that attend existing Springfield markets selling products such as meat, dairy, produce, baked goods and prepared foods. The market is being established to offer consumers an opportunity to purchase local food year-round and create a market for area farmers to sell their products directly to consumers in the winter.
