“On My Own Time” entry forms and fees due this week

On My Own TimeArtwork entry, identification forms and fees will need to be submitted by Thursday, Sept. 30, to one of the LLCC coordinators (Misty or Lindee). Artwork is due to the LLCC coordinators by Wed., Oct. 6.

ARTS Springfield Area Arts Council

Springfield Area Arts Council’s On My Own Time (OMOT) program provides LLCC faculty and staff the opportunity to display original art created outside the office. Faculty and staff may enter up to three works of art each. Works previously entered in OMOT or created prior to 2020 are not eligible. The artist fee is $5 per artwork submitted. The fee assists SAAC with costs of the OMOT program.

"Giraffe" by Greg WalbertLLCC’s in-house exhibit will be featured on the LLCC-Springfield campus Oct. 12-28. The artist of the favorite piece at LLCC will win the LLCC People’s Choice Award and receive a $100 Visa gift card courtesy of the Philip and Mary Kathryn Trutter Museum.

The city-wide exhibit at the Springfield Art Association (Nov. 3-20) will showcase first place award-winning artwork from all participating businesses, agencies and institutions. At the previous OMOT in 2019, three LLCC employees had four pieces of art move on to the city-wide exhibit!

LLCC observing Adult Education and Family Literacy Week

LLCC Adult Education. The bridge to your success.In observance of Adult Education and Family Literacy Week in Illinois, Lincoln Land Community College is highlighting the free services offered to individuals 16 and over by its Adult Education department.

“We offer classes to prepare individuals to obtain a high school equivalency certificate or master the English language,” said Jamil Steele, director of LLCC Adult Education. “These classes are funded through combined state and federal funds administered through the Illinois Community College Board and help students improve skills that lead to further education and employment.”

“We urge anyone who could benefit from our services to ‘move ahead with adult ed,’” added Steele.

In addition to high school equivalency preparation and English as a Second Language classes, the program offers adult basic education (pre-high school equivalency) and career pathways programs.

Jolene Lamb, coordinator, LLCC Culinary Institute, demonstrated the preparation of caramelized onion and sweet potato crostini on the WICS Farmers Market segment Sept. 16. Here is the recipe:

Caramelized Onion and Sweet Potato Crostini

Yield 2 dozen

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 lbs. sweet onion, sliced
  • ¼ cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon chopped fresh thyme leaves
  • 2 garlic cloves, minced
  • 2 lbs. Sweet potatoes cooked and mashed
  • 1 cup ricotta
  • 1 teaspoon nutmeg
  • Salt
  • Freshly ground pepper
  • ¼ cup fresh grated parmesan cheese
  • 2 baguettes sliced and toasted

Directions

Heat the olive oil over medium heat in a large, heavy skillet. Add the onions. Cook, stirring often, until tender and just beginning to color, about 10 minutes. Add the vinegar, brown sugar, thyme, garlic and a generous pinch of salt. Turn the heat to low, cover and cook another 10 to 20 minutes, stirring often, until the onions are golden brown and very sweet and soft. Remove from the heat.

While the onions are cooking, slice and toast baguette.

In a separate bowl, combine potatoes, ricotta, nutmeg and a pinch of pepper.

Assemble crostini with a smear of potato cheese mixture, and top with caramelized onions. Finish with a sprinkle of fresh grated parmesan.

Vaccination clinic today

As a reminder, we will be hosting another vaccination clinic in A. Lincoln Commons on the Springfield campus today, Sept. 14, 8:30 a.m.-noon.

If you received your first vaccination dose at the clinics held on Aug. 23 or 24, today’s clinic is being held so you can get your second dose and be fully vaccinated. In addition, this clinic is open to anyone (employee or student) still wanting to begin their vaccination process and get their first dose. The clinic will have both the Pfizer (two-dose regimen) and the Johnson & Johnson (only one dose required) available.
